- around 80 g silver fishes (or called noodle fishes)
- 1 tsp cooking wine
- 1 tsp maggi sauce (or soy sauce) for stir fry silver fishes
- a tint of ground white pepper (or black pepper)
- 3 eggs
- 1/2 tsp salt or maggi sauce (or soy sauce) for eggs
- 3 eggs weight X 1.5 hot water (by weight)

- around 80 g silver fishes (or called noodle fishes)

1. Use 3% salt water to defrost silver fishes. Rinse it and use paper towel to pad them dry.
2. Stir fry silver fishes for 20 sec., add cooking wine and maggi.
3. Keep stir it until dry up the sauce.
4. Remove from the heat, add ground pepper to the silver fishes, and set it aside.
5. Boil 1" of water in a big pot with streamer rack. (the streamer rack must be hight enough that the stainless steel bowl bottom can't touch the water)
6. Coat some oil in the stainless steel bowl.
- 3 eggs
- 1/2 tsp salt or maggi sauce (or soy sauce) for eggs
- 3 eggs weight X 1.5 hot water (by wieght)
7. Beat well the eggs with salt or maggi sauce in the bowl.
8. Add silver fishes in the egg, and mix it well.
9. Slowly add the hot water to the egg, but don't cook it. Mis well.
10. When the pot of water is boiling, turn to medium low heat, add the stream eggs with silver fishes, cover with lid but not completely. Stream for 8 mins.
11. Shake gently to check the stream egg is ready or not. If not ready, keep cooking every 2 mins until done. (Once it done, the middle of the stream egg will look like pudding.)
12. Serve and enjoy.
