chocolate truffle


ingredients:
- 1 part dark chocolate or unsweetened chocolate
- 1 part condensed milk
- cocoa powder for coating

1. Use parchment paper to layer a baking sheet.

2. Use microwave to melt chocolate, 30 sec. each time, stir it.  When the chocolate nearly all melt shorten the heat time to 10 sec. or 5 sec. until it just all melt.

3. Add condensed milk to the melted chocolate, stir it until it mix.

4. Pour the mixed chocolate on the prepared parchment paper, smoothing the surface of the chocolate.

5. Put in the fridge for 1 hr or until the chocolate truffle solid.

6. Take it our from the fridge and cut it into bite-size piece. (or it can be shaped as a ball)

7. Coat the truffle with cocoa powder.  Enjoy!!

baked pumpkin


ingredients:
- 1 small pumpkin
- 1 tbsp olive oil
- salt and pepper for seasoning

1. Clean the pumpkin and cut the pumpkin into slices.

2. Preheat the air-fryer @ 360F.

3. Toss the sliced pumpkin with olive oil, salt and pepper.

4. Bake the pumpkin with 1 layer for 20 mins.  Flipping the pumpkin halfway through cooking.

note:
baked potatoes:
- 1 small bag of small yellow potatoes
- 1 tbsp olive oil
- salt and pepper for seasoning

1. Clean the potatoes skin,

2. Use a fork the punch some hole around each potatoes.

3. Preheat the air-fryer @ 360F.

4. Toss the potatoes with olive oil, salt and pepper,

5. Bake the potatoes with 1 layer for 25 mins.  Flipping the potatoes halfway through cooking.

sweet purple potatoes pudding


ingredients:
- 1 package of instant sweet purple potatoes milk tea powder
- 1 package of lotus root powder
- 375 ml cold and boiling water

1. Use just enough cold water to mix both powder.

2. Add boiling water until everything is 375 ml, mix.

3. Store in pudding jars, store in the fridge and ready to eat after 6 hrs.

notes: it can use any kind of instant milk tea or coffee powder to substitute.

mochi bread


ingredients:
- 80 g glutinous rice flour or tapioca flour
- 10 g all-purpose flour
- 90 g: 1 large egg + whipping cream
- 10 g sugar
- 1/4 tsp salt
- 5 g black sesame seeds, optional

1. Preheat the air-fryer to 330F degree.

2. Mix everything together.

3. Use spoon to shape the mochi balls and use wet spoon to smooth the balls.

4. Bake the mochi bread for 20 mins.

note:
- If bake in convenient oven, use 350F for 30 mins.
- Also can add whipped cream into the mochi bread when it's cool down.

steamed buns

purple potatoes steamed bun

ingredients:
- 200 g all-purpose flour, or purple potatoes mixed flour or pumpkin mixed flour
- 100 g milk
- 2 g instant yeast
- 10 - 30 g white / brown sugar, optional

Without melting the sugar version:
1. Warm the milk in microwave for 15 sec. or until lukewarm.  Jump to step #3.

Melting the sugar first version (if the sugar is in large pieces):
1. Warm the milk to melt the brown sugar if need.  

2. Wait until the sugar milk cool down to lukewarm (around 40 C degree).

3. Add yeast to the milk and whist.  Set aside for 5 to 10 mins.

4. Mix all the ingredients in the stand-mixer until smooth dough, about 5-10 mins.

5. Cover the dough with plastic wrap, wait until double size.  About 1 hr.

6. Boil a big pan of water with medium high heat on the stovetop.

7. Prepare lining steam cloth or steam paper on the bamboo steamer.

6. Gently fold the dough, shaped it, Place on the bamboo steamer.

7.  Steam for 20 mins.  Ready to eat.


pumpkin steamed buns

braised fish sauce duck


ingredients:
- 1 duck
- 8 tbsp fish sauce
- 2 1/2 pieces slab sugar
- 2 slices ginger
- 1 green onion

1. Use fish sauce to marinate duck for 24 hrs.

2. Cook at medium high in the dutch oven on the stovetop with everything until it boil.

3. Change the temperature to medium low and continue to cook for 1 hr.  Turn it over every 15 mins.

4. Ready to eat!!

caramel sauce


ingredients:
- 4 tbsp sugar
- 3/4 tbsp (or 9 tsp) water
- few drops of lemon juice
- 1 tbsp butter
- 2 tbsp whipping cream

1. Heat the sugar, water and lemon juice in the pot on the stovetop, don't stir and keep cooking until all the sugar melt and turning to yellow.

2. Reduce the heat to medium to medium low, add butter.

3. Stir it until the butter melt.

4. Add whipping cream and keep stir it until it's creamy.

5. Remove from the heat and pour the sauce into a clean container.  Ready to use.
